
Ingredients:
4 fresh or frozen boneless, skinless chicken breasts
1 cup water
1 cup uncooked instant rice
3/4 cup Caesar salad dressing (I thought this was too much, just add to taste)
8 (10 inch) flour tortillas
shredded lettuce
chopped tomatoes
croutons (optional)
Spray a large skillet, and heat to med-high. Add chicken, cook until lightly browned and juices are clear. (We sliced ours into smaller strips or chunks)
Add water and bring to a boil. Stir in rice. Cover and remove from heat; let stand 5 min or until liquid is absorbed. Stir in salad dressing.
Fill tortillas and add lettuce, tomatoes, cheese, croutons, whatever. Delicious!
