French dip sandwiches

I must give credit where credit is due. This is from Our Best Bites introduced to me by my friend Christa!  Everything I have ever tried of theirs is like heaven!  These are no exception!  My kids (even my picky eaters) loved them!  Super easy to make, hardly any prep and they make a great left over!

Ingredients:

1  2 1/2- 3lb. beef roast
2 Tbsp. olive oil
salt and pepper
2 1-ounce packages dry onion soup mix
2 c. water
2 cans beef broth
6-8 large buns
Swiss, provolone, or mozzarella cheese, shredded or sliced.

Directions:

Heat oil in a large pot over medium-high heat and rub roast with salt and pepper.
When oil is hot place roast carefully in pot and brown all sides. Put roast in slow cooker and sprinkle with onions soup mix. Pour water and beef broth over roast.

Cook on low for 8-10 hours   or    high for 4-5 and then low for 2-3 additional hours.

You will know when it is done when it falls apart with your fork.
Place meat in rolls open faced topped with cheese and broil until cheese is melted. (watch carefully so they don't burn)

Ladle juices into small cups for dipping!
