Grilled Pineapple Teriyaki Burger

I absolutely LOVE the Hawaiian Special at Salt Lake Burger Company!! My mouth waters just thinking about it. Here is my knock off version.

Ingredients:

hamburger patties
thinly sliced ham
pineapple rings (marinated in teriyaki sauce for several hours or over night)
Provolone or Swiss cheese
lettuce, tomatoes, pickles, onions or any dressing you may like.
hamburger buns (buttered)

Directions:

Grill patties to your liking, top with cheese. The last 3-5 min grill pineapple rings only a couple of minutes on each side (you don't want them to burn) and toast your hamburger buns on the grill!

Easy!!

BEST CHICKEN MARINADE EVER!

This is seriously the best chicken marinade - EVER!
It's the same marinade for the Beach Street Lemon Chicken Linguini I posted a while ago, but we use just the marinade ALL the time and we get lots of compliments on it. Anyway, since it's summer and time for grilling (yay!) I thought I would re-post it.

1/2 c olive oil (or canola)
1 clove garlic, whole
2 TBS Cajun seasoning
2 TBS minced parsley
1 TBS brown sugar
2 TBS lemon juice
1 TBS soy sauce

Mix together and pour over chicken in a Ziploc bag. Soooo good!

Father's Day Spice Rub

I found this great spice rub in a Lowe's Creative Ideas magazine. This rub is great on beef, poultry, fish and vegetables.

Ingredients:

2 Tbsp paprika
2 Tbsp dried parsley
4 tsp ground hot chili powder
1 tsp ground cumin
2 tsp dried oregano
1 tsp ground coriander
1 1/2 tsp kosher salt
1 tsp cracked black pepper

glass jar with lid
ribbon, string or raffia
gift tag

Combine in a clean jar with a lid. Tie with ribbon/raffia and make a cute tag and give it to Dad for father's day.

BEACH STREET LEMON CHICKEN LINGUINI



Okay, I stole this recipe from Deals to Meals, so I wanted to give credit.
I just made this tonight and it was soooo good! In fact, the chicken was so good on its own that I am going to make it like that from now on.

Marinade:
1/2 cup olive oil
1 clove garlic - whole
2 TBS cajun seasoning
2 TBS lemon juice
2 TBS parsley
1 TBS brown sugar
1 TBS soy sauce
4 chicken breasts, sliced

Combine marinade ingredients in ziploc bag. Refrigerate 1-12 hrs.

Cook marinated chicken in skillet on medium heat until cooked.

Linguini:
l lb. linguini
1/2 cup olive oil
zest from 1 lemon
juice from 1 lemon
1/2 cup chopped green onion
1/4 cup chopped fresh parsley
salt & pepper
Parmesan cheese

Cook linguini in boiling, salted water until done. Drain & rinse noodles. Combine next 5 ingredients in serving bowl, add pasta, toss well. Sprinkle with salt & pepper. Toss in parmesan cheese.
Serve with marinated cajun chicken.

Grilled Pork Chops


I just had the best grilled pork chops for dinner tonight! I needed something quick (yes it was 4:30 and I hadn't started). This would be better if it had more time to marinate, but was super yummy even marinating for only 1 1/2 hrs!

Ingredients:
4 pork chops
1/4 c soy sauce
1/4 c water
2 tbsp brown sugar
2 tbsp lemon juice
1 tbsp minced onions
1 tsp garlic powder

Directions:
Mix and marinate! (best if left over night)

Cook on grill for 4 min on one side, turn baste with some of the extra marinate and grill for 6 more min or until done.

Yep it is that easy!
