
Ingredients:
mayonnaise or Miracle Whip
1/2 c dried tomatoes chopped
8 10in flour tortillas
head of iceberg lettuce chopped
1 medium onion thinly sliced
16 bacon slices cooked and crumbled*
3 chopped cooked chicken breasts (optional)**
1 tsp of salt
1 tsp of pepper
Preparation:
Combine tomatoes and mayonnaise in small bowl.
Spread evenly over one side of each tortilla leaving 1/2in boarder.
Layer lettuce, onions and bacon.
Sprinkle with salt and pepper.
Roll up tortillas, cut in half diagonally, and secure with toothpick.
*I either make this when I have leftover bacon to use, or you can buy precooked bacon, for a really quick meal.
**If I have leftover chicken I throw that in too for a heavier meal.
