This was so warm and delicious, it just hit the spot. Ha ha It's also nice and crisp and not soggy like most hot tuna sandwiches.
1/2 cup chopped celery
1/2 onion, chopped
2 cans water-packed tuna
1/4 cup mayo
1 cup shredded mozzarella cheese
1 TBS lemon juice
4 English muffins, split in half
Preheat oven 350*
In skillet over med-low heat, cook celery and onion until softened. Add tuna, cheese, mayo and lemon juice. Cook and stir until warm.
Place muffin halves on baking sheet and evenly distribute topping.
Bake for 10 min.
