We love chicken sandwiches at our house - but this one is great because it has ham and cheese, too! I just used regular hamburger buns, but it would have been even better toasted or on a heartier bun. Anyway, it was easy and delicious!
Ingredients:
2-4 chicken breasts, pounded down to 1/2 inch thick
1/2 c flour seasoned with salt, pepper and garlic powder (opt)
1 c breadcrumbs
2 eggs with 2 TBS water, blended
sliced ham
swiss cheese
buns
lettuce
mayo and/or dijon mustard
Directions:
Pound chicken breasts, cut into two pieces. Beat eggs & water in a shallow dish. Place breadcrumbs and flour in separate bowls.
Dip the chicken in flour, then the egg, and then the breadcrumbs. Place on a greased cookie sheet.
Bake at 375* until golden brown and cooked through. Place 2 slices of ham and 1 slice of cheese on top of each chicken breast. Turn oven to broil for 2-3 min to heat the ham and melt the cheese. Place on a bun and add desired toppings.
