This was a throw together last minute meal. It turned out so good! My husband said this was one of his favorite meals. So yummy!!
Ingredients:
2 Tbs soy sauce
2 Tbs Weber's Kick'n Chicken seasoning
4-6 chicken breasts
1/4 c bbq sauce
1/4 c crumbled up cooked bacon
1 c Colby Jack cheese shredded
1 can 14 oz Rotel
2 sliced green onions
Directions:
Marinate chicken for 30-40 min in soy sauce and chicken seasoning.
Preheat oven to *400
Grill chicken 6-7 min each side or until done
Place chicken in a baking dish covered with foil
Top each chicken breast with 1Tbs bbq sauce, 1/4 c cheese, 1/4 c Rotel, green onions and 1 Tbs bacon.
Place in oven and bake until cheese is melted.

Barbecue Chicken Pizza
I never thought I would want to post again after the 25 long days of making treats for Christmas :) Maybe I'm just in the habit now. But this can't even count. Super easy and most people wouldn't even need a recipe for this. But maybe this will give you an idea for your super bowl party! And maybe the Pepperoni Pizza Puffs or the Wingers Sticky Fingers! Just planning ahead :)
Ingredients:
1 prebaked 12 inch pizza crust
3 cups cooked chicken, shredded or cubed
1/2 cup cooked bacon, crumbled
1 red onion sliced
1 cup barbecue sauce
1 cup (4 oz) shredded part-skim mozzarella cheese
1/2 cup shredded cheddar cheese
minced fresh parsley
Directions:
Place crust on pizza pan or cookie sheet. Spread barbecue sauce over crust to about 1/2 inch of edge. Add chicken, onion, bacon. Sprinkle with cheeses.
Bake at 450* for 8-10 minutes or until cheese is melted and crust is golden brown. Sprinkle with parsley.

BARBECUE BEEF
This is the best Barbecue Beef recipe! It is great for picnics or large gatherings, because it makes a TON! Plus - it's super easy, just throw everything together and let it do it's thing. :)
4 cups ginger ale
1 chopped onion
1 clove crushed garlic
3 cups Ketchup
1 TBS Worcestershire sauce
1 TBS white vinegar
1 tsp salt
1/2 tsp pepper
1/2 tsp dry mustard
1/2 tsp lemon juice
1 cup brown sugar
1 large roast (rump or round is best)
Cook above ingredients for 8 hours at 300* - 325*. Shred and serve on buns or rolls. Serves about 20 - 25 people.
